Boudin Stuffed Bacon Wrapped Pork Loin with Veggies (Slow Cooker)
Ingredients
- 2-4 lb. boudin stuffed/bacon wrapped pork loin**
- 1 c. good quality Taco Sauce
- 1 c. herb flavored Ranch Dressing
- Salt, red/black pepper, garlic powder
- 4-6 medium yams, cut into ½” slices
- 2 medium Vidalia onions, cut into wedges
- Bell peppers (red, yellow, orange, green) cut into strips
- 1 (8-oz.) container baby portabella mushrooms
- 1 container of red cherry tomatoes, left whole
- 1-2 c. red wine
- Olive oil
- Worcestershire sauce
- Marzetti Simply Dressed Vinaigrette-Lemon Flavored
Instructions
- Place the pork loin in a large plastic baggie and pour in the Taco sauce and Ranch Dressing. Let marinate overnight or for 4-6 hours.
- I am using my CROCK POT BBQ PIT-SLOW COOKER**. Spray inside with PAM.
- Place the rack inside the crock pot.
- Layer the veggies as follows and with each layer drizzle with olive oil and season with salt, red/black pepper and garlic powder---YAMS, ONIONS, PEPPERS, MUSHROOMS AND TOMATOES.
- Season the outside of pork loin with some pepper. I would hold off on the salt because of the bacon.
- Lay the pork loin on top of the veggies.
- Pour the red wind into the bottom of the CROCK POT.
- Drizzle everything with more olive oil, some Worcestershire and lemon dressing.
- Lower the top and place on HIGH for 4-6 hours. Depending on size of the pork loin, just check to see if done. You can also just put on LOW and cook longer and slower.
- Turn off Crock Pot and remove the pork loin on a cutting board and let rest for 5-8 minutes. Carve and serve with the veggies.

*****I bought this pork loin already stuffed and wrapped at ROUSE’S IN LAFAYETTE. The CROCK POT BBQ PIT-SLOW COOKER is no longer made but they have made something similar but you can cook in the oven or if your CROCK POT is large enough to hold all the ingredients-USE IT!
