  • 1 lb. flank steak, trimmed
  • Salt, red/black pepper
  • PAM
  • 2 T. Extra virgin olive oil
  • 2 T. cider vinegar
  • 2 t. Dijon mustard
  • 6 c. Romaine lettuce, torn into bite-size pieces
  • 1 pt. cherry tomatoes, halved
  • 1 small red onion, minced
  • ¼ c. crumbled blue cheese
  • 3 slices crispy cooked bacon, crumbled
  1. Season steak with salt and peppers. Spray a nonstick grill pan with PAM and set over medium-high heat.
  2. Add steak and cook 5-6 minutes on each side for medium-rare.
  3. Transfer steak to cutting board and let rest 5 minutes. Cut steak on angle against grain into 12 slices.
  4. In a bowl, whisk the oil, vinegar, mustard and about ½ t. salt.
  5. Add the lettuce, tomatoes and onions to the dressing and toss to coat well. Season with additional salt and black pepper, if desired.
  6. Transfer the salad to a platter.
  7. Top with steak slices and sprinkle with blue cheese and bacon.
  8. Serve immediately.
*****You can change up the crumbled cheeses and different greens, etc.
