BLT Steak Salad
Ingredients
- 1 lb. flank steak, trimmed
- Salt, red/black pepper
- PAM
- 2 T. Extra virgin olive oil
- 2 T. cider vinegar
- 2 t. Dijon mustard
- 6 c. Romaine lettuce, torn into bite-size pieces
- 1 pt. cherry tomatoes, halved
- 1 small red onion, minced
- ¼ c. crumbled blue cheese
- 3 slices crispy cooked bacon, crumbled
Instructions
- Season steak with salt and peppers. Spray a nonstick grill pan with PAM and set over medium-high heat.
- Add steak and cook 5-6 minutes on each side for medium-rare.
- Transfer steak to cutting board and let rest 5 minutes. Cut steak on angle against grain into 12 slices.
- In a bowl, whisk the oil, vinegar, mustard and about ½ t. salt.
- Add the lettuce, tomatoes and onions to the dressing and toss to coat well. Season with additional salt and black pepper, if desired.
- Transfer the salad to a platter.
- Top with steak slices and sprinkle with blue cheese and bacon.
- Serve immediately.
