Basil Pesto Roasted Green Beans
Ingredients
- 1 lb. fresh green beans, washed and tips cut off
- Kosher salt, black pepper, garlic powder and lemon pepper
- 1 (5-oz.) jar basil pesto
- 1 (6-oz.) container fresh pico de gallo
- Juice of 2 lemons
- Zest of 1 lemon
Instructions
- Wash and prep the green beans and place in shallow baking dish.
- Drizzle the pesto all over the beans. With your hands try to rub the pesto all over the beans.
- Season with salt, black pepper, garlic powder and lemon pepper.
- Mix the pic into the dish with your hands as well.
- Squeeze the lemon juice all over the top.
- Sprinkle the zest over the top of dish.
- Roast in 350 oven for 12-15 minutes. Taste test to get the beans to be crispy but not tough or too soggy.
