Baked Parmesan Crusted Cauliflower
Ingredients
- 8 oz. fresh cauliflower florets
- 1 c. panko bread crumbs
- ⅓ c. freshly grated parmesan cheese
- Salt, black pepper
- 2 large eggs, lightly beaten
- DIPPING SAUCE:
- 2 T. catsup
- 2 T. Miracle Whip, Mayo or Spicy Mayo
- 1 T. honey
- 1 T. Dijon mustard
Instructions
- Combine all the ingredients for the dipping sauce. Taste for adjustment to fit your taste. Cover in saran wrap and refrigerate until ready to use.
- Preheat oven 400.
- Mix panko, parmesan, salt and pepper in a bowl.
- Place the lightly beaten eggs in another bowl.
- Dip each floret in the egg, shake off excess and then dip in the panko mixture.
- Repeat this with each floret until each one is dipped twice.
- Spray a baking sheet with PAM.
- Place the breaded florets on the baking sheet.
- Bake for about 8-10 minutes, until tender and slightly golden.
- Serve with the dipping sauce.
