Bacon Flavored Mashed Potatoes
Ingredients
- 4 lbs. Yukon God potatoes, peeled and cut into 1” pieces
- Salt
- ½ lb. thick-cut bacon, finely diced
- 1 large red onion, finely chopped
- ¼ c. apple cider vinegar
- 3 T. whole-grain mustard
- 1 t. celery seeds
- 1 ½ sticks butter
- 1 ¼ c. milk
- 1 c. Miracle Whip or mayo
- ¼ c. finely chopped parsley
- Fresh black pepper, salt
Instructions
- In large pot, place potatoes in cold salted water and bring to boil, then simmer and cook until tender but not mushy. Drain in colander and shake off excess liquid.
- In large skillet, cook bacon until crisp.
- With slotted spoon, remove bacon and place on paper towels to drain. Drain off but 2-3 T. of the bacon fat.
- Add the onion to the bacon fat and cook until just before starting to brown.
- Add vinegar, mustard and celery seeds. Cook until most of the liquid is absorbed.
- In large saucepan, melt butter in milk.
- Press potatoes through a ricer into the pot of milk and mix well.
- Fold in mayo, bacon, onion mixture and parsley. Season with salt and pepper.
- Serve right away.
