Amazing Easy Creamy Alfredo Tortellini

AMAZING EASY CREAMY ALFREDO TORTELLINI
1 (9-oz.) pkg. refrigerated three cheese tortellini
2 T. butter
3 T. minced garlic
¼ t. crushed red pepper flakes
2 T. flour
1 c. milk
½ c. half and half
2 oz. cream cheese, cubed
¼ c. freshly grated Parmesan cheese
Kosher salt/black pepper to taste
Chopped fresh basil or parsley, garnish

  1. In large pot of boiling salted water, cook tortellini according to package directions. Drain well.
  2. Melt butter in saucepan.
  3. Add garlic and red pepper flakes and cook, stir frequently for 1 minute.
  4. Whisk in flour until lightly browned, about 1 minute
  5. Gradually whisk in milk and half/half and cook, whisking constantly, until slightly thickened, 2-3 minutes.
  6. Stir in cheeses until melted. If mixture too thick add more milk as needed.
  7. Season with salt and pepper to taste.
  8. Stir in tortellini and gently toss to combine. Taste for seasoning again.
  9. Garnish with basil or parsley.
