Alice's Veggie Beef Soup
Ingredients
- 3-4 lbs. beef stew meat, seasoned
- Canola oil
- ½ c. red wine
- 1 (16-oz.) container chopped onion mix
- 2 T. minced garlic
- 4 c. V-8 Juice
- 2 (32-oz.) container beef stock or broth
- 1 (7.48-oz.) package of Mrs. Grass Homestyle Beef-Vegetable Soup Mix
- 2 (10 ¾-oz.) can cream of potato soup
- 6 medium red potatoes, cubed (do not peel)
- 1 large zucchini, cubed
- 1 large yellow squash, cubed
- 1 (8-oz.) waffle cut carrots
- 1 (12-oz.) pkg. frozen mixed veggies
- 1 (10.8-oz.) pkg. frozen corn kernels
- 1 (12-oz.) pkg. frozen lima beans
- 1 (10.8-oz.) pkg. frozen cut green beans
- 1 (10.8-oz.) pkg. frozen green peas
- 8 oz. smothered okra or frozen okra with tomatoes
- 8 oz. elbow pasta, uncooked
- Salt, red/black pepper, garlic powder
- Water
Instructions
- In large soup pot, pour enough canola oil to cover bottom, but not too deep. Heat over medium heat.
- Just let frozen veggies sit on counter to defrost. No need to cook them.
- When oil is hot, place seasoned meat into pot and brown on all sides. Remove from pot and drain on paper towels. Drain off excess oil.
- Return pot to heat. Add the wine to deglaze bottom of pot.
- Add the onions and garlic and saute until soft.
- Add the V-8 juice, broth and the veggie soup mix. Stir to blend well.
- Add the potato soup and mix well.
- Add the meat and all the veggies to the pot.
- Add enough water to cover everything.
- You want this to simmer for 1-2 hours until meat and potatoes are tender. Just add more water if soup is too thick and you want to cook longer.
- Taste for seasoning.
- Add the uncooked pasta and stir to mix. Once pasta is cooked the soup is done.
- Taste for seasoning.
Notes
*****Great to freeze. Just remember the okra, potatoes and pasta tend to absorb the liquid so the soup will be thick. You can add more water to thin it out if you want a thinner soup. If you freeze, then defrost, you will see that the soup thickens up more. Just add the water as needed. You can add what veggies you like as well as different types of beef.
