Quick and Easy Peanut Brittle
Ingredients
- 1 c. sugar
- ½ c. white Karo
- ¼ t. salt
- 1 c. shelled raw peanuts
- 1 T. butter
- 1 ½ t. baking soda
- 1 t. vanilla
Instructions
- Line a baking sheet with wax paper.
- Spray the wax paper with PAM.
- Combine the sugar, salt and Karo in 4 qt. microwave safe glass bowl.
- Stir in peanuts.
- Microwave on HIGH until light brown (about 8-10 minutes). Stir about every 2 minutes during the cooking process.
- Remove from microwave and stir in remaining ingredients. Add the baking soda last. The mixture will be foamy.
- Stir quickly and pour onto wax paper.
- Spread it out so that it is thin.
- Let set and cool. Break into pieces and store in airtight container.

*****You can use pecans, walnuts and even sunflower seeds instead of peanuts (especially for those who have peanut allergies).
