Khalua Glazed Carrots
Ingredients
  • 3 c. diagonally sliced carrots
  • 1 T. butter
  • 1 T. brown sugar
  • 1 T. honey
  • 3 T. Kahlua or other coffee-flavored liqueur, divided
  • 1 t. cornstarch
  • ½ t. salt
  • 3 slices bacon, cooked and crumbled
  • 1 T. freshly chopped parsley
Instructions
  1. Place carrots in veggie steamer over small amount of boiling water. Cover and steam 5 minutes or until tender. Remove from heat.
  2. Melt butter in large skillet. Stir in brown sugar, honey and 2 T. of Kahlua. Cook until bubbly.
  3. Combine 1 T. Kahlua and cornstarch, stir well. Add to brown sugar mixture.
  4. Stir in salt. Continue cooking until thickened and bubbly.
  5. Add carrots and toss gently to coat. Cook just until carrots are thoroughly heated.
  6. Spoon into serving dish. Sprinkle with crumbled bacon and chopped parsley.
