
Orange-Chocolate Mug Cake

2 T. vegetable oil
Finely grated zest of 1 orange
2 T. fresh orange juice
¼ c. sugar
2 T. unsweetened cocoa powder
¼ c. self-rising flour
Pinch of kosher salt
1. In large mug, whisk together oil, zest, juice and sugar with a fork.
2. Add cocoa, flour and salt.
3. Beat batter until smooth.
4. Microwave the cake for 1 ½ to 2 ½ minutes until risen and firm.
*****Topping ideas: Cream cheese icing, caramel glaze, whipped topping candied orange peel or chopped almonds.
