CARAMELIZED ONIONS AND SWEET POTATO SALAD

Olive oil
3 red onions, thinly sliced
1 T. Dijon mustard
¼ c. balsamic vinegar
1 T. honey
1 T. finely chopped lemon or orange zest
1 T. finely chopped fresh thyme
2-4 sweet potatoes, sliced into ½” slices
Canola oil
Salt and black pepper
1 t. dried cumin
1. Heat some olive oil in bottom of a heavy skillet, just enough to cover the bottom.
2. Saute the onions until golden.
3. Add mustard and vinegar and cook for another 1-2 minutes.
4. Remove from the heat and add honey, zest and thyme. Stir to combine. Let cool.
5. Preheat grill. Brush potato slices with canola oil and season with salt, black pepper and cumin.
6. Grill on each side for 3-5 minutes or until just cooked through.
7. Place potatoes in bowl and fold in the onion mixture.
8. Season to taste and serve.
