
DELICIOUS GREEK YOGURT MASHED POTATES

¾ lb. Yukon gold potatoes, peeled and cubed
1/3 c. plain Greek yogurt
1 T. olive oil
¼ c. minced green onion
1 T. minced lemon zest
Salt, black pepper to taste
1. Boil potatoes in pot of salted water until tender.
2. Drain potatoes and return to pot.
3. Cook potatoes over medium heat, stirring to remove excess moisture.
4. Mash potatoes to desired consistency.
5. Stir in yogurt, oil, green onions, and zest.
6. Season to taste.
