GRILLED STUFFED ZUCCHINI ROLLS

GRILLED STUFFED ZUCCHINI ROLLS

3-4 medium zucchini, sliced lengthwise into ¼” slices
Olive oil
Salt, black pepper
2 oz. soft goat cheese or your favorite soft cheese
1 T. freshly minced parsley or chives
1 T. fresh lemon juice
2 c. baby spinach or kale leaves or mixture of both
1/3 c. basil leaves

1. Discard the outer slices of zucchini and brush both sides of each zucchini strips with the olive oil.
2. Season both sides of zucchini with salt and pepper.
3. Place on a preheated grill pan until tender, about 4-6 minutes per side.
4. In bowl, combine cheese, parsley, and lemon juice. Mash with a fork. Add a little seasoning if needed.
5. Put about ½ t. of cheese mixture about ½” from the end of the zucchini slice.
6. Top with a few spinach leaves and small pieces of basil.
7. Roll up and place seam side down on serving platter.
*****These are good served warm or room temperature.
