CRUSTLESS ZUCCHINI PIE

3 c. grated fresh zucchini (this will be 2-3 medium size)
1 medium Vidalia onion, chopped
1 c. flour
1 t. baking powder
1 t. red pepper, or to taste
1 t. salt, or to taste
1 t. black pepper, or to taste
1 c. grated Italian Blend Cheeses or your favorite
3 eggs, beaten
¼ c. olive oil
¼ c. chopped fresh basil
½ c. grated Parmesan cheese, divided
1. Preheat oven 350.
2. Combine all of the ingredients in a large bowl, reserving 2 T. parmesan cheese.
3. Spoon the mixture into a 10” round glass pie plate or metal pie pan that is coated with PAM.
4. Bake 45-50 minutes or until golden brown.
5. Remove from oven and sprinkle with remaining cheese, add more if you desire.
6. Cool 10 minutes before slicing.
