Healthy Air-Fryer Zucchini and Corn Fritters
YOGURT TAHINI SAUCE:
½ c. yogurt
1 t. tahini
Salt
FRITTERS:
2 medium zucchini
1 c. corn kernels
1 cooked medium potato
1 T. chickpea flour or regular flour
3 T. minced garlic
1-2 t. olive oil
1. SAUCE: Mix all the sauce ingredients and set aside.
2. FRITTERS: Grate zucchini with grater or food processor.
3. In bowl, mix grated zucchini with a little sauce and let sit for 15 minutes. Squeeze out excess water using hands or cheesecloth.
4. Cook the potato in microwave for 3 minutes, place in cold water for 2-3 minutes. Peel and then grate or mash.
5. Combine zucchini, potato, corn, flour, garlic, salt and pepper in bowl.
6. Take about 2 T. batter, shape into a patty and place on parchment paper lined baking sheet (brush the parchment paper with olive oil before placing the fritters.)
7. Lightly brush oil also on top of the fritters.
8. Preheat AIR FRYER to 360.
9. Place fritters in preheated AIR FRYER mesh without touching each other.
10. Cook for 8 minutes.
11. Turn fritters and cook for 3-4 minutes more or until well done and golden.
12. Serve with catsup or yogurt sauce.
