Refreshing Corn Salad
REFRESHING CORN SALAD
DRESSING:
4 T. olive oil
6 T. apple cider vinegar
1 t. sugar
1 t. Dijon mustard
Salt/pepper to taste
Juice of 1 lime
SALAD:
6 ears corn, shucked
2 T. olive oil
¼ red onion, finely diced
2 c. cherry tomatoes, sliced in half
1 avocado, cubed
1 c. fresh spinach
1. DRESSING: In small mixing bowl, combine all the DRESSING ingredients. Mix well. Set aside.
2. SALAD: Add couple of inches of water to large skillet and bring to boil.
3. Add corn and cook 3-4 minutes, rotating throughout. Drain and set aside.
4. Preheat grill on medium heat.
5. Brush corn with olive oil mixture and grill nicely golden on all sides.
6. Once corn is cooled, cut corn off cob and add to a bowl.
7. Add red onion, tomatoes, avocado and spinach to combine.
8. Drizzle with dressing. Taste for seasoning.
