Quick Ham and Biscuit Casserole

1 (16-oz.) can refrigerated jumbo biscuits
8 oz. deli ham, rough chop
1 c. shredded cheddar cheese
1 c. shredded Swiss cheese
4 eggs
1 c. milk
1 T. Dijon mustard, plus more for serving.
Kosher salt, black pepper
Chopped fresh chives
1. Preheat oven 375.
2. Split each raw biscuit in half.
3. Arrange 12 halves in even layer in bottom of lightly greased 13×9” baking dish and lightly press together.
4. Bake until partially cooked and lightly browned, about 8 minutes.
5. Reduce oven temp to 350.
6. Top baked biscuit evenly with ham and sprinkle with cheeses.
7. Whisk together eggs, milk, mustard, salt and pepper in bowl until combined.
8. Pour egg mixture evenly over ham and cheese.
9. Cut remaining biscuit halves in half and line them along sides of baking dish.
10. Cover with foil and bake 350 until egg mixture is set, 45-50 minutes.
11. Remove from oven and let stand 10 minutes.
12. Sprinkle with chives and drizzle with mustard.
