Festive Colorful Shortbread Cookies

1 ½ c. butter, softened
1 ¼ c. powdered sugar
1 t. vanilla
3 c. flour
½ c. red sanding sugar
½ c. green sanding sugar
1. In large bowl, beat butter and powdered sugar with mixer at medium speed until creamy.
2. Scrape sides as needed.
3. Beat in vanilla. Gradually add flour, beating until combined.
4. Turn out dough onto lightly floured surface and divide dough in half.
5. Shape each portion into 2 ¼” diameter log.
6. Wrap in plastic and refrigerate at least 1 hour.
7. Preheat oven 350. Line baking sheet with parchment paper.
8. Place sanding sugars in separate shallow plates. Roll logs in sugar to fully coat.
9. Cut logs into ½” thick slices and place on prepared pan.
10. Bake until lightly browned, 10-12 minutes. Let cool on pans 10 minutes.
11. Remove from pans and cool completely on wire rack.
12. Store in airtight container.
