Spellbound Grilled Santa Fe Sandwich

CHILI HERB MAYO:
2 T. fresh basil, minced
2 T. fresh cilantro or parsley, minced
1 T. fresh chives, minced
1 c. mayo
1 t. chili powder
Salt/black pepper to taste
GRILLED CHICKEN SANDWICH:
1 lb. boneless, skinless, thinly cut chicken breasts
1 bell pepper, sliced into 1” pieces
Olive oil, for basting
Salt/black pepper to taste
1 onion, thinly sliced
1 avocado, sliced
4 slices of sourdough bread
4 slices pepper jack cheese
1. MAYO: In small bowl, mix basil, cilantro, chives, mayo and chili powder. Taste for seasoning to add salt/black pepper. Set mayo aside.
2. GRILLED CHICKEN SANDWICH: Preheat grill to medium.
3. Brush chicken and bell pepper slices with olive oil and season with salt and pepper.
4. Add chicken and peppers to grill and cook until peppers begin to char and chicken is cooked through, 165 degrees, about 4 minutes per side.
5. In small skillet, add 1/3 c. olive oil and heat over medium.
6. Add onions and stir until they begin to brown and are softened, about 10 minutes.
7. Preheat a skillet on low heat.
8. Spread a layer of may on one slice of sourdough.
9. Add ½ of caramelized onions, ½ of bell peppers, ½ avocado, ½ grilled chicken and ½ pepper jack.
10. Cover sandwich with second piece of bread.
11. Brush with olive oil.
12. Repeat sandwich process with remaining ingredients.
13. Cook sandwiches in preheated skillet, flipping once halfway through, until cheese begins to melt, 5-7 minutes.
14. Slice in half and serve.
