Impressive Pepperoni Queso

Vegetable oil
1 white onion, diced
1 (4-oz.) can chopped green chiles
½ (10-oz.) can diced tomatoes with green chiles
8 oz. Velveeta cheese, cubed
8 oz. sharp cheddar cheese, shredded
1-2 fresh jalapenos, seeded and diced
½ c. sliced pepperoni, chopped
Soft pretzel bites, chips or crackers for serving
1. Drizzle oil for light coating in bottom of saucepan over medium heat.
2. Add onion and cook until softened.
3. Add canned chiles and tomatoes and bring to a simmer.
4. Reduce heat and stir in Velveeta and stir until smooth.
5. Take off heat and stir in cheddar cheese until melted.
6. Stir in jalapeno and half pepperoni.
7. Garnish with remaining pepperoni. Serve with favorite item.
