
Yummy Beer Cheese Dip

¼ c. butter
½ c. finely chopped onion
¼ c. flour
1 (12-oz.) can IPA beer
¼ c. half and half
6 oz. shredded fontina cheese
6 oz. shredded sharp cheddar cheese
1 T. Dijon mustard
1 t. Worcestershire sauce
Chopped chives and black pepper for garnish
Pretzels, to serve
1. In saucepan, melt butter over medium heat.
2. Add onion and cook, stir until soft, 5 minutes.
3. Gradually whisk in flour and cook, whisk constantly, until lightly browned, 1 minute.
4. Gradually whisk in beer and half and half.
5. Cook, whisk constantly until thickened and just begins to bubble, 5-7 minutes.
6. Reduce heat to low and gradually add cheeses, whisk constantly, until melted and combined.
7. Remove from heat.
8. Whisk in Dijon mustard and Worcestershire.
9. Garnish with chives and black pepper.
10. Serve with pretzels.
