Sweetest Summer Watermelon Lemonade

SWEETEST SUMMER WATERMELON LEMONADE
1 c. water
½ c. sugar
6 c. cubed fresh watermelon (remove seeds)
1 ½ c. 100% pineapple juice
12 oz. can frozen-lemonade concentrate, thawed
2 T. sugar
Zest of 1 lemon
2 T. light corn syrup or lemon juice
1. In mixing bowl, combine water and ½ c. sugar, stir until dissolved.
2. In a blender, add melon cubes and sugar water mixture.
3. Blend until smooth (depending on size of your blender, you might have to do in batches.)
4. Place a large fine mesh sieve over a large pitcher and pour the pureed melon.
5. Using back of wooden spoon, press to remove liquid from the melon mixture. Discard solids.
6. Pour in thawed lemonade concentrate and pineapple juice. Refrigerate until cold, at least 2 hours.
7. On a small plate, add a few T. of sugar and lemon zest. Stir with fork to combine.
8. To another plate, add a few T. of corn syrup or lemon juice.
9. Dip top rims of serving glasses into corn syrup, then sugar mixture.
10. Add ice to each glass and pour in melon lemonade.
11. Garnish with additional melon pieces.
