Unique Smashed Potatoes with Lemon Vinaigrette

UNIQUE SMASHED POTATOES WITH LEMON VINAIGRETTE
1-2 lb. new potatoes (small)
Kosher salt
Black pepper
Olive oil
4 T. butter
3 lemons, zested and juiced
1 T. honey
1 shallot, diced
1 T. diced chives
1 T. chopped parsley
½ c. extra-virgin olive oil
3 chopped green onions, garnish
Paprika, garnish

  1. POTATOES: Place potatoes in salted water and let come to a boil for about 10 minutes. Drain.
  2. Drizzle olive oil on large platter.
  3. Place potatoes on platter and smash the potatoes.
  4. Top with olive oil and season with salt and pepper.
  5. Coat a large nonstick skillet with olive oil, add potatoes and cook until crispy on first side, about 2 minutes per side. Flip potatoes, add butter and cook until crispy. Remove to a plate.
  6. VINAIGRETTE: Whisk the lemon juice and zest, honey, shallots, chives and parsley in small bowl. Slowly whisk the extra virgin olive oil. Season to taste with salt and pepper.
  7. Place potatoes back into skillet and drizzle with vinaigrette or serve on side.
    *You can add cooked veggies to the potatoes like asparagus, green beans, broccoli, etc.
