Homemade Cheddar Biscuits

HOMEMADE CHEDDAR BISCUITS
2 c. flour
1 T. baking powder
1 t. Kosher salt
¼ c. cold whipped butter, divided
1 c. Greek yogurt
4 T. minced garlic, divided
2 oz. shredded cheddar cheese
PAM OLIVE OIL SPRAY
3 T. finely chopped parsley

  1. Preheat oven 375. Line sheet pan with silicone mat for best results and adjust rack to top third of oven.
  2. Combine dry ingredients with fork. Cut 2 T. of butter with pastry knife for best results.
  3. Add yogurt, cheddar, half garlic and mix with fork.
  4. Using your hands, knead the dough at least 20 times until it holds together and becomes tacky and smooth.
  5. Form into a ball and cut into 8 equal pieces.
  6. Roll each into a ball, place on prepared baking sheet, slightly flattened to ½” thick.
  7. Spray biscuits with oil and bake on top rack about 20-25 minutes or until golden. Once done, let rest 10 minutes.
  8. Melt the remaining butter in small frying pan, add remaining garlic and saute on low heat for 1 minute. When biscuits are ready brush them with melted garlic butter and top with parsley.
