Comfort Breakfast Skillet

COMFORT BREAKFAST SKILLET
12 slices of bacon
4 eggs
1 c. diced red potatoes
1 bell pepper, chopped
½ c. shredded cheddar cheese or your favorite
Fresh parsley, garnish
Salt/black pepper

  1. Cut bacon into 1” pieces.
  2. Place in skillet over medium heat. Cook until crispy, drain half of fat and bring back to stovetop.
  3. Add potatoes and pepper to pan. Cook until potatoes are golden, about 10 minutes.
  4. Place potato mixture into a bowl.
  5. Place skillet back on stovetop.
  6. Add eggs to skillet. Don’t stir. Le them cook for 1 minute or until egg whites set.
  7. Carefully place potato mixture around the eggs, sprinkling some cheese on top and cook for another minute.
  8. Allow skillet to cool a bit before serving.
    *You can add different cheeses, veggies, potatoes, sausage, etc.
