Comfort Breakfast Skillet
COMFORT BREAKFAST SKILLET
12 slices of bacon
4 eggs
1 c. diced red potatoes
1 bell pepper, chopped
½ c. shredded cheddar cheese or your favorite
Fresh parsley, garnish
Salt/black pepper
- Cut bacon into 1” pieces.
- Place in skillet over medium heat. Cook until crispy, drain half of fat and bring back to stovetop.
- Add potatoes and pepper to pan. Cook until potatoes are golden, about 10 minutes.
- Place potato mixture into a bowl.
- Place skillet back on stovetop.
- Add eggs to skillet. Don’t stir. Le them cook for 1 minute or until egg whites set.
- Carefully place potato mixture around the eggs, sprinkling some cheese on top and cook for another minute.
- Allow skillet to cool a bit before serving.
*You can add different cheeses, veggies, potatoes, sausage, etc.
