Flavorful German Cucumber Salad

FLAVORFUL GERMAN CUCUMBER SALAD
2 large cucumbers, thinly sliced
½ onion, thinly sliced
1 t. salt
½ c. sour cream
2 T. white sugar
2 T. white vinegar
1 t. dried dill
1 t. dried parsley
1 t. paprika
- On a platter, spread cucumbers and onions.
- Season with salt and let rest 30 minutes.
- Squeeze the excess moisture from cucumbers away from the platter.
- In large bowl, stir the sour cream, sugar, vinegar, dill and parsley together.
- Fold the veggie mixture into the sour cream mixture.
- Refrigerate salad at least 8 hour or overnight.
- Taste for seasonings. Garnish with paprika and serve.
