AMAZING EASY CREAMY ALFREDO TORTELLINI
1 (9-oz.) pkg. refrigerated three cheese tortellini
2 T. butter
3 T. minced garlic
¼ t. crushed red pepper flakes
2 T. flour
1 c. milk
½ c. half and half
2 oz. cream cheese, cubed
¼ c. freshly grated Parmesan cheese
Kosher salt/black pepper to taste
Chopped fresh basil or parsley, garnish
- In large pot of boiling salted water, cook tortellini according to package directions. Drain well.
- Melt butter in saucepan.
- Add garlic and red pepper flakes and cook, stir frequently for 1 minute.
- Whisk in flour until lightly browned, about 1 minute
- Gradually whisk in milk and half/half and cook, whisking constantly, until slightly thickened, 2-3 minutes.
- Stir in cheeses until melted. If mixture too thick add more milk as needed.
- Season with salt and pepper to taste.
- Stir in tortellini and gently toss to combine. Taste for seasoning again.
- Garnish with basil or parsley.
