Tasty Zucchini Zoodle, Green Peas and Tortellini Salad

TASTY ZUCCHINI ZOODLES, GREEN PEAS AND TORTELLINI SALAD
1 (9-oz.) pkg. refrigerated whole-wheat 3 cheese tortellini
½ c. frozen peas
2 fresh zucchinis cut into ribbons or zoodles
Olive oil
2 T. minced garlic
Zest and juice of 1 fresh lemon
Salt, black pepper
Fresh basil leaves

  1. Cook pasta according to package directions, omitting salt and oil.
  2. Add peas to last 5 minutes of pasta cooking.
  3. Drain and cool 10 minutes.
  4. Place in a medium bowl.
  5. Heat medium skillet over medium eat and drizzle with olive oil to coat bottom.
  6. Add garlic, stir constantly. Remove from skillet.
  7. In skillet, drizzle a little more olive oil as needed. Add zoodles and cook until slightly softened, 1-2 minutes.
  8. Add zoodles and garlic to tortellini mixture in bowl.
  9. Combine zest, lemon juice, salt and pepper. Mix into tortellini mixture.
  10. Drizzle with olive oil. Gently toss to coat and mix.
  11. Taste for any additional seasoning if needed.
  12. Garnish with chopped fresh basil, if desired.
