Satisfying Yukon Gold and Green Bean Casserole

SATISFYING YUKON GOLD AND GREEN BEAN CASSEROLE
12-16 small or medium size Yukon Gold potatoes, cut in half or quarters
8 oz. fresh green beans, stemmed
12 whole garlic cloves
1 pint assorted colored cherry tomatoes, whole or halved
6 springs fresh thyme leaves
Olive oil
Kosher salt/black pepper
Balsamic glaze or vinegar
Shavings for fresh Parmesan cheese, garnish

  1. Spray a baking dish that will hold all your ingredients (at least 3-4 quart) with PAM.
  2. In a bowl combine all the ingredients, season with salt and pepper.
  3. Drizzle with olive oil and mix well.
  4. Place in baking dish and cover with foil and bake in 350 oven for 30-40 minutes or until potatoes are tender.
  5. Remove from oven and drizzle with balsamic glaze or vinegar. Toss. Taste for seasoning. Garnish with Parmesan cheese shavings.
