Crispy Green Bean Fries
CRISPY GREEN BEAN FRIES
2 T. olive oil
½ lb. fresh green beans, trimmed
Kosher salt
Zest of 1 large lemon
Juice of 1 large lemon
- Heat a large skillet over medium-high heat for 3 minutes.
- Add the oil and heat for another minute.
- Scatter the beans evenly in pan and sprinkle with salt.
- Make sure beans do not overlap. If your pan is too small, do it in another batch.
- Allow the beans to cook undisturbed, blistered and beginning to split on the first side, about 2-3 minutes.
- Using tongs, flip beans and cook another 2 minutes.
- Flip one more time and cook until all the beans have a good amount of golden brown, about another minutes.
- Remove beans to paper towel lined plate to drain.
- Wipe the excess oil out of skillet.
- Place beans back in skillet. Add the lemon zest and juice. Taste for seasoning. Serve immediately.
