Freaky Frankenstein Cookies

FREAKY FRANKENSTEIN COOKIES
1 (17 ½-oz.) pkg. sugar cookie mix
1 T. flour
½ c. butter, melted
1 large egg
1 t. vanilla
¼ t. peppermint extract
5 drops green food coloring
24 Andes mint candies
Black and white jimmies
Decorating icing
- In large bowl, combine cookie mix and flour.
- Stir in butter, egg, extracts and food coloring until well blended.
- Loosely shape into 6” long roll. Wrap in plastic and refrigerate for 1 hour.
- Unwrap and shape roll into a square log using waxed paper. Freeze 30 minutes or until firm.
- Preheat oven 350. Unwrap and cut log cross wise into ¼” slices.
- Place 1” apart on parchment paper-lined baking sheets.
- Place one mint candy on top of each square.
- Sprinkle with jimmies.
- Bake for 10-12 minutes or until edges are light brown.
- Remove from pans to wire racks to cool completely.
- Decorate faces as desired with icing.
