Zesty Corn and Tasso Casserole

2 T. canola oil
6 ears fresh corn, kernels cut off
1 red bell pepper, chopped
1 bunch green onions, chopped (green part)
1 c. chopped tasso ham
1 (8-oz.) cream cheese, softened
½ c. sour cream
¼ c. chopped fresh parsley
Salt, red pepper
2-3 c. crushed Kettle-Cooked potato chips or your favorite brand/flavor
Paprika

1. Preheat oven 350.
2. Spray 2 ½ qt. baking dish with PAM. Set aside.
3. In large skillet, heat oil.
4. Add corn, bell pepper, green onion and tasso. Cook until veggies are tender.
5. Add cream cheese. Stir until it melts.
6. Remove from heat.
7. Add sour cream, parsley, salt and pepper.
8. Spoon mixture into baking dish.
9. Sprinkle with chips and paprika.
10. Bake 20 minutes or until heated through.
