Tasty Sweet Corn and Zucchini
Ingredients
- 2 c. rough chop fresh zucchini
- 2 c. fresh corn kernels
- 1 medium Vidalia onion, diced
- ¼ c. butter
- ¼ c. chopped fresh chives
- 1 T. taco seasoning mix
Instructions
- Melt butter in a non-stick skillet over medium heat.
- Saute the onion and zucchini for about 5-6 minutes.
- Add the corn, chives and taco seasoning mix.
- Saute until tender.
- Taste for seasoning.
