Ingredients
  • 1 large egg
  • 3 T. oil
  • 1 t. liquid red food coloring
  • 3 T. buttermilk
  • 2 t. vanilla extract
  • ¼ c. sugar
  • 2 T. unsweetened cocoa powder
  • ¼ c. self-rising flour
  • Pinch of kosher salt
  • ¼ t. cider, white, white wine or rice vinegar
Instructions
  1. In large mug, whisk together the egg and oil with a fork.
  2. Stir in food coloring, buttermilk, vanilla and sugar.
  3. Add cocoa, flour, salt and vinegar.
  4. Beat batter until smooth.
  5. Divide batter between two mugs.
  6. Microwave separately for 1 ½ to 2 ½ minutes each until risen and firm.
Notes
*****Topping ideas: Cream cheese frosting, whipped cream, fresh berries, red sugar sprinkles, candied pecans or chocolate shavings.
If you want a blue velvet cake, replace with blue liquid food coloring.
For any other color, omit cocoa powder and replace with equal amount of flour.
