Baked Sweet Potato Balls
Ingredients
  • 2 large sweet potatoes
  • 1 egg, beaten
  • ¼-1/2 c. flour
  • ¼ t. salt
  • ¼ t. black pepper
  • ¼ t. garlic powder
  • ¼ t. paprika
Instructions
  1. Wash and clean the potatoes.
  2. Put into cold water and bring to a boil. Boil about 20 minutes. You want the potatoes to be firm but tender but not mushy.
  3. Drain and cool until you can handle the potatoes.
  4. With a grater, grate the potatoes into a bowl.
  5. Add the egg and seasonings.
  6. Gradually add flour and whisk together. Keep adding flour until you can form balls with the potato mixture. If for some reason, you overcook the potatoes and they tend to be mushy, you will just have to add more flour but they will be okay.
  7. Form balls and place on baking sheet sprayed with PAM.
  8. Preheat oven to 375.
  9. Place the baking sheet in oven and cook 20-30 minutes or until balls are golden and firm.
  10. Remove from oven and serve with your favorite dipping sauce like catsup or Ranch dressing.
