Heirloom Tomato Salad with Basil and Mozzarella

Ingredients
  • 3-4 large heirloom tomatoes (try to get a mix of shapes and colors), cut into nice bite size slices
  • 1 bunch of fresh basil
  • 8-12 oz. fresh mozzarella, cut into cubes
  • Kosher salt
  • Fresh black pepper
Instructions
  1. Heirloom Tomato Salad: In large serving bowl, place the cut tomatoes and mozzarella cubes.
  2. Place as much of fresh basil that you might like. Give a rough chop.
  3. Set aside in refrigerator until ready to serve.

Ingredients
  • ¼ c. white balsamic vinegar
  • 2 T. chopped fresh basil
  • 2 T. fresh lemon juice
  • 1 T. Dijon mustard
  • 1 t. sugar
  • 1 t. minced garlic
  • ½ t. salt
  • ½ t. black pepper
  • ⅓ c. extra virgin olive oil
Instructions
  1. Whisk together all the ingredients except oil in small bowl.
  2. Gradually add the olive oil in a slow, steady stream, whisking until blended.
  3. Taste for seasoning.
  4. Pour over the Heirloom Tomato Salad. Taste for seasoning again.
