Gorgeous Chicken Salad with Grapes, Almonds and Broccoli
Ingredients
- 2 large eggs, lightly beaten
- 3 T. milk
- 6 (4-oz.) chicken cutlets, ½” thick
- 1 ½ c. seasoned breadcrumbs
- ½ c. apple cider vinegar
- 2 T. honey
- 1 T. Dijon mustard
- Kosher salt, black pepper
- ½ c. olive oil
- 1 (5-oz.) pkg. spring lettuce mix or your favorite lettuce
- 3 c. fresh broccoli florets
- ½ c. seedless red grapes, halved
- ½ c. seedless green grapes, halved
- ½ c. sliced honey-roasted almonds
Instructions
- Preheat oven 425.
- Whisk together eggs and 3 T. milk in bowl.
- Dip chicken in egg mixture and dredge in breadcrumb, pressing to firmly adhere.
- Place on foil lined baking sheet.
- Bake 15 minutes or until golden brown and done.
- Whisk together vinegar, honey, mustard, olive oil and season with salt and pepper.
- Place the lettuce, broccoli, and grapes in a large bowl. Pour some of the dressing over and toss to coat.
- Taste for seasoning.
- Top with cooked chicken and sliced almonds.
- Serve the remaining dressing on the side.

*****You can cut chicken into bite-size pieces, if desired.
