Nutty and Crunchy Okra
Ingredients
- 1 lb. fresh okra, cut into ½” pieces
- Salt
- 1 egg white, lightly beaten
- 1 c. all-purpose baking mix
- ½ c. finely chopped salted dry-roasted peanuts
- Pepper, salt
- Peanut oil
Instructions
- Toss the cut okra with salt and let sit for 20-30 minutes.
- Add the beaten egg white, stirring to coat the okra.
- Stir together the baking mix, peanuts, salt and pepper in a large bowl.
- Add the okra, tossing to coat.
- Gently press the peanut mixture onto the okra, shaking off excess.
- Pour 2” oil in cast iron skillet. Heat to 375.
- Fry okra in batches, 2-4 minutes or until golden.
- Drain on paper towel.
Notes
*****You can add dipping sauces like Ranch or Bleu Cheese Dressing, etc. Frozen cut okra can be used, but thaw it first.
