All-In-One Baked Eggs with Sausage and Potatoes
Ingredients
- 2 lbs. small Yukon Gold potatoes
- 1 ½ lbs. ground sausage or chorizo, casing removed
- 1 large Vidalia onion, finely chopped
- 1 large green bell pepper, chopped
- 2 T. olive oil
- 2 T. minced garlic
- 8 large eggs
- Salt and black pepper to taste
- Biscuits or Toast to serve with dish
Instructions
- Preheat oven 375. Place potatoes in large pot and cover with cold water. Bring to boil and cook until tender but not mushy. Drain and let cool. You can leave peelings or peel and cut into ¾” pieces.
- Heat 12-14” iron skillet. Add sausage, break into fine chunks and cook over modern heat. Stir and until cooked through and lightly browned.
- Add onion, bell pepper and cook until soft. Add garlic and cook another minute.
- Remove the sausage mixture onto a plate. If you want to get rid of excess grease, drain on paper towels. Wipe out the skillet with paper towel.
- Heat the olive oil in skillet. Add potatoes, season and cook until golden and crispy, about 5 minutes.
- Stir in sausage mixture. Remove skillet from heat.
- With a ladle or spoon, make 8 pocket indentions in the potato-sausage mixture about 1” apart.
- Crack egg into each pocket. Place skillet in middle of oven for about 10-12 minutes, until egg whites are set and yolks are still runny.
- Remove skillet from oven and serve with biscuits or toast and a nice fruit salad.
Notes
*****This is a great brunch meal that you can serve a large group at one time. You can boil your potatoes the day before and refrigerate them until ready to use. Let come to room temperature before using.
