Tasty Turkey Chowder
Ingredients
- 96 oz. chicken broth
- Olive oil
- 1 (16-oz.) container chopped onion mix
- 1 red bell pepper, chopped
- 4 stalks of celery, chopped
- 2 T. minced garlic
- 2 c. sliced carrots
- 1 c. diced green chilies or mild chow-chow
- 1 (16-oz.) frozen package veggie gumbo mix
- 6 ears of fresh corn, cut from the cob or 16 oz. frozen corn, thawed
- ¼ c. flour
- 2 c. milk, can be skim
- 2 ½ lbs. Honey Ham Boneless Turkey Breast Slices, diced
- 2 c. shredded cheddar cheese
- Salt, red/black pepper
- Chopped green onion, garnish
- Water if needed, to thin it out.
Instructions
- In large pot, drizzle olive oil to lightly cover bottom and place over medium heat.
- Add the onion mix, bell pepper, celery, carrots and garlic. Saute until tender.
- Add the green chilies and corn and cook for 1-2 minutes.
- Add the broth and bring mixture to a boil.
- Reduce heat and simmer for 10-12 minutes.
- In a bowl, place the flower and whisk in the milk until the mixture is smooth.
- Slowly whisk the milk mixture into the broth. Stir to mix well.
- Stir in the turkey, cheese and stir until well blended.
- Taste for seasoning before adding salt. These turkey breasts will have a lot of seasoning on them.
- Stir until cheese is melted.
- Serve in bowls and garnish with green onions.
Notes
*****If mixture is too thick you can add water. If you would like it thicker, you can make more of the flour/milk mixture. It just depends on how thick or think you like your chowder. You can substitute different veggies and cheese and also can used diced chicken.
