Ingredients
  • 3 (10-oz.) fresh steamer bags of cut cauliflower or equal amounts from a whole cauliflowers
  • Salt, black pepper
  • ¼ c. chicken stock
  • ½-3/4 c. freshly grated parmesan cheese
  • 1 T. extra virgin olive oil
  • 2 T. Greek yogurt or sour cream
  • 1-2 T. finely minced garlic
  • Fresh chopped sage, thyme or rosemary, for garnish
Instructions
  1. Place cauliflower in boiling salted water and cook until tender but not too mushy, about 8 minutes.
  2. Drain well and dry with paper towels. Try to remove as much excess water as possible.
  3. Place cauliflower in food processor, stock, cheese, olive oil, yogurt or sour cream and garlic.
  4. Process until smooth.
  5. Season with salt and pepper.
  6. Place in serving dish and garnish with your favorite herb.
Notes
*****Do not be afraid to add seasoning because the cauliflower is very bland. You need to kick up the spices.
