Unique Mashed Cauliflower
Ingredients
- 3 (10-oz.) fresh steamer bags of cut cauliflower or equal amounts from a whole cauliflowers
- Salt, black pepper
- ¼ c. chicken stock
- ½-3/4 c. freshly grated parmesan cheese
- 1 T. extra virgin olive oil
- 2 T. Greek yogurt or sour cream
- 1-2 T. finely minced garlic
- Fresh chopped sage, thyme or rosemary, for garnish
Instructions
- Place cauliflower in boiling salted water and cook until tender but not too mushy, about 8 minutes.
- Drain well and dry with paper towels. Try to remove as much excess water as possible.
- Place cauliflower in food processor, stock, cheese, olive oil, yogurt or sour cream and garlic.
- Process until smooth.
- Season with salt and pepper.
- Place in serving dish and garnish with your favorite herb.
Notes
*****Do not be afraid to add seasoning because the cauliflower is very bland. You need to kick up the spices.
