Garlicky Mustard Greens
Ingredients
- 2 lbs. fresh mustard greens
- 1 T. olive oil
- 1 c. chopped Vidalia onions
- 2 T. minced garlic
- 1 c. chopped red bell pepper
- ½ c. veggie or chicken broth
- 1 T. cider vinegar
- 2 t. sugar
- Salt, black pepper
Instructions
- Remove stems and any wilted leaves from greens.
- Stack several leaves. Roll up. Cut crosswise into 1” slices. Repeat with remaining leaves.
- Heat oil in large saucepan over medium heat.
- Add onion and garlic.
- Cook and stir until onions are tender.
- Stir in greens, bell pepper and broth.
- Reduce heat to low.
- Cover and cook 20-25 minutes or until greens are tender, stirring occasionally.
- Combine vinegar and sugar in small bowl. Stir to dissolve sugar.
- Stir into greens and season with salt and pepper.
- Remove from heat and serve.
