Fresh Green Bean and Creole Tomato Salad with Dressing
Ingredients
  • 2-3 lbs. of green and yellow string beans
  • ¼ c. extra virgin olive oil
  • 1 medium red onion, thinly sliced
  • 1 shallot, minced
  • 3 T. chopped tarragon or your favorite herb
  • ¼-1/2 c. balsamic vinegar
  • Salt, black pepper
  • 1 pint cherry tomatoes, halved (if you can get varied colors)
Instructions
  1. In large pot of boiling salted water, cook beans until just tender, 3-4 minutes. Drain and spread on baking sheet to cool. Pat dry.
  2. In bowl, whisk olive oil, red onion, shallots, tarragon, salt and pepper.
  3. Drizzle in as much of the vinegar that suits your taste. Mix well.
  4. In a large bowl, combine the beans and tomatoes.
  5. Add the dressing and toss.
  6. Taste for more seasoning.
  7. Serve at room temperature or chill.
