Wonderful Fresh Tomato, Spinach and Cheesy Pie


2 unbaked 9” pie crusts
7 oz. of Gouda cheese, sliced
8 oz. Creamy Havarti cheese, sliced
5 oz. fresh baby spinach
4 medium Creole or fresh tomatoes, sliced
Kosher salt, black pepper
Freshly chopped parsley, garnish

1. With a fork prick the uncooked pie crust all over the bottom and on the sides.
2. Bake in 350 oven for 10 minutes.
3. Take the slices of cheese and alternate by placing on bottom of pie crusts.
4. Cover the cheese with a handful of fresh spinach. Does not really matter how much you put because the spinach cooks down to basically nothing.
5. Layer the fresh sliced tomatoes across the spinach.
6. Season with salt and pepper.
7. With left over slices of cheese, break into pieces and sprinkle across the top of the tomatoes.
8. Bake in the 350 oven for 30-40 minutes, until crust is golden brown and center is bubbly.
*****You can change up the cheeses and you can do without the spinach if you desire. You can also sub other veggies like kale, broccoli, mushrooms, etc. You can also use whole wheat pie crusts, etc.
