Scrumptious Zucchini Boats
Ingredients
- 4 fresh zucchinis, cut in half and core out pulp
- ½ c. basil pesto
- 2 T. minced garlic
- Salt, black pepper
- 1 pt. red cherry tomatoes
- 1 pt. yellow cherry tomatoes
- Italian bread crumbs
- 1 container marinated mozzarella balls
- Freshly grated parmesan cheese
- Fresh basil leaves, rough chop
Instructions
- Place the cored zucchinis in a baking dish.
- Mix the basil pesto and garlic.
- Brush over the zucchini.
- Sprinkle with salt and pepper.
- Place cherry tomatoes, alternating colors, down the center of zucchini.
- Sprinkle the top of zucchini with bread crumbs.
- Bake in 350 oven for 30 minutes or until tender.
- Place the mozzarella balls in between the tomatoes.
- Place back in oven under broil and cook until golden and bubbly.
- Remove from oven, sprinkle with grated parmesan cheese and basil leaves.
