Ingredients
  • 1 lb. baby red potatoes, quartered
  • ⅓ c. sliced green onions
  • 1 (11.5-oz.) bottle Marie’s Blue Cheese Vinaigrette
  • 2 large avocados
  • 1 T. fresh lemon juice
  • 6 c. shredded romaine lettuce
  • 1 pt. cherry tomatoes, halved
  • 1 c. shredded white cheddar cheese
  • 2 oz. blue cheese, crumbled
  • 6 cooked bacon slices, crumbled
  • Kosher salt, black pepper
Instructions
  1. Cook potatoes in salted boiling water until tender. Drain.
  2. Toss potatoes with green onions and ⅓ c. of dressing. Season with salt and pepper to taste.
  3. Cover and chill overnight.
  4. Peel and chop avocados, toss with lemon juice.
  5. Toss lettuce with avocado mixture, tomatoes, cheddar cheese and blue cheese.
  6. Arrange lettuce mixture on large serving platter.
  7. Top with potato mixture and sprinkle with bacon.
  8. Serve with remaining dressing, along with salt and pepper if needed.
