Ingredients
  • 1 lb. fresh okra, cut into ½” pieces
  • Salt
  • 1 egg white, lightly beaten
  • 1 c. all-purpose baking mix
  • ½ c. finely chopped salted dry-roasted peanuts
  • Pepper, salt
  • Peanut oil
Instructions
  1. Toss the cut okra with salt and let sit for 20-30 minutes.
  2. Add the beaten egg white, stirring to coat the okra.
  3. Stir together the baking mix, peanuts, salt and pepper in a large bowl.
  4. Add the okra, tossing to coat.
  5. Gently press the peanut mixture onto the okra, shaking off excess.
  6. Pour 2” oil in cast iron skillet. Heat to 375.
  7. Fry okra in batches, 2-4 minutes or until golden.
  8. Drain on paper towel.
Notes
*****You can add dipping sauces like Ranch or Bleu Cheese Dressing, etc. Frozen cut okra can be used, but thaw it first.
