Irish Soda Bread
Ingredients
- 2 ½ c. flour
- 2 ¼ c. whole wheat flour
- ¾ c. rolled oats
- 1 T. plus 1 t. baking powder
- 2 t. sugar
- 2 t. salt
- ¾ t. baking soda
- 1 ¾ c. buttermilk
- 6 T. unsalted butter, melted and cooled
Instructions
- Preheat oven 350.
- In medium bowl, whisk flours, oats, baking powder, sugar, salt and baking soda.
- Add the buttermilk and cooled butter and stir with a wooden spoon until dough is well combined.
- Turn dough out onto a lightly floured surface and knead it 10 times.
- Shape dough into a 9” round loaf and transfer to baking sheet.
- Slash and “X” about ¼” deep into top of the bread.
- Bake for 1 hour or until bread is golden and bottom sounds hollow when lightly tapped.
- Transfer bread to wire rack and let cool completely.
