Flavorful Broiled Salmon and Asparagus Sheet Dinner
Ingredients
- 2 bunches fresh asparagus, washed and tough ends snapped off
- Olive oil
- Kosher salt, black pepper
- 4 (6-oz.) fresh skinned salmon fillets
- ½ c. crème fraiche
- 1 T. whole grain mustard
- 1 T. chopped fresh chives
Instructions
- Preheat broiler with rack 4” from heat.
- Put trimmed asparagus on 12x17” rimmed baking sheet.
- Drizzle with olive oil and season with salt and pepper. Make sure the asparagus get seasoning and oil all over it.
- Arrange asparagus in single layer on baking sheet.
- Rub the salmon with olive oil and season.
- Place the fillets on top of asparagus.
- Broil salmon until no longer translucent but still moist and asparagus is browned in spots, 8-12 minutes.
- Whisk together crème fraiche, mustard, chives and season with salt and pepper in a small bowl.
- Serve along with salmon and asparagus.
Notes
*****If for some reason your asparagus may need additional cooking, gently lift the salmon and set aside and let the veggies finish cooking.
